You remove top part of main stem above second node.

This causes two new stems to grow from that position, which will then develop into two more stems, and so on. You end up with many secondary branches.

Topping is sometimes better way to train than fimming. Although both methods remove main shoot, topping removes entire main top, whereas fimming only prunes it.
